Josep Cuixart’s creamery is located in Catalonia outside of Barcelona. He created the sheep’s milk cheese Ombra in the early 1990s. Aged a minimum of four months, the wheels develop a beautiful natural rind. The firm paste is occasionally studded with protein crystals, and offers flavors of grass and nuts with a balance of sheep’s milk tanginess. Older wheels can offer a deeper sweetness that is reminiscent of butterscotch. Each piece weighs about a half pound.
